“Argentinian here. Fantastic. You're probably the first foreigner that I see cooking matambre that takes care of actually "tenderizing" the meat before throwing it to the grill. That is an *extremely* important step: in particular, let me point out that almost nobody in Argentina tenderizes the meat the way you did (though what you did seemed okay to me). Typically, we would put this into a regular oven (or a dutch oven) covered with milk and spices and let it cook there at 80-90 degrees (Celsius) for two hours. After that process, matambre becomes extremely tender and with 5 minutes per side on the grill becomes the pinacle of meat on Earth.”

“Amazing Matambre my friend! One note for those who want to test it, generally here in Argentina we first boil it in a mix of milk and water/vegetables soup. As he says, it's a real hard meat, so giving it a good cook by boilling it you leave it really tender. Once you have it tender you can put it down in the grill to cook it. You can make it "A la fugazzeta" with mozzarella cheese and onions, that's my favourite one :)”
